Lapai (Niger) Jan. 29, 2017 (NAN) Prof. Dennis Balogu of Ibrahim Badamasi Babangida University, Lapai, Niger state, has suggested the inclusion of egg powder to the menu of Internally Displaced Persons (IDPs) in camps to enhance the nutrition value of their food.
Balogu, a professor of Food Science and Technology and the Dean, Faculty of Applied Science and Technology, made the suggestion in an interview with the News Agency of Nigeria (NAN) on Sunday in Lapai.
He said that the egg powder was well fortified with vitamins and would help in tackling the nutrition challenges of the IDPs.
“A spoon full of this egg powder added to the Internally Displaced Person’s pap or beverages, will go a long way in nourishing them ,” he said.
Balogu said that if the government was interested in partnering with the institution, the egg powder could be produced in large quantity.
“We can dry powder of more than 100 eggs in three hours, depending on availability of power.
“It is a very good innovation and we are thinking that if it is marketed, it will pay off for IBBU and the consumers,” he said
He explained that the egg powder was consolidated with lots of eggs as all the fluid in the egg was often drained out and safely packaged to last for a very long time.
He said that such method of preservation could enable the product to last for up to two years from its normal shelf life. (NAN)
